Stuffed Breakfast Murasaki Sweet potato with Egg and Sausage

The Japanese Murasaki Sweet Potato is a combination of Idaho potatoes and sweet potatoes. Murasaki sweet potatoes have a purple skin and light colored flesh and have a sweet, nutty flavor with a slightly dry texture. These can be baked whole, peeled and roasted, boiled, mashed and sliced. Sweet potatoes are high in calcium, vitamin C, have beneficial amino acids and are medium glycemic. I heard them being advertised on the radio for Trader Joe's so I decided to give them a whirl and boy are they delicious!

INGREDIENTS:

-2-4 Murasaki Sweet Potatoes or Regular Sweet Potatoes
-2-4 organic eggs
-fresh or frozen red peppers, onions and green peppers (I use 1/2 the bag of Trader Joe's frozen fire roasted red peppers, onions and green peppers)
-1 package (12 0z) Smoked, Apple Chardonnay Chicken Sausage(Trader Joe's)
-salt and pepper to taste
-1-2 tbsp coconut oil

DIRECTIONS:

1) Wash potatoes, bake at 400 degrees for 30 minutes. Take out of oven.

2) While potatoes are baking sautee the fire roasted red peppers, onions, green peppers and sliced chicken sausage in pan that has 1 tbsp of coconut oil in it. Sautee until crispy.

3) slice the top layer of the sweet potatoes off. Make sure it is a thin layer. Save it for roasting.

4) Make a round whole in sweet potato to make room for the egg.

5) Carefully crack one egg in each potato.

6) Place peppers, onions and sausage on top of each potato.  Sprinkle salt and pepper to taste. 

7) Bake in oven another 30 min at 400 degrees or until egg is cooked through.
